Mediterranean Quinoa Salad
Ingredients
Quinoa, cooked
Cherry tomatoes, halved
Cucumber, diced
Kalamata olives, sliced
Red onion, finely chopped
Feta cheese, crumbled
Fresh parsley, chopped
Lemon vinaigrette dressing
Instructions
In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, olives, red onion, feta cheese, and parsley.
Drizzle with lemon vinaigrette dressing and toss to combine.
