Moroccan Couscous Salad
Ingredients
Couscous, cooked
Chickpeas, cooked
Cherry tomatoes, halved
Cucumber, diced
Red onion, finely chopped
Fresh mint leaves, chopped
Feta cheese, crumbled
Lemon vinaigrette dressing
Instructions
In a large bowl, combine cooked couscous, chickpeas, cherry tomatoes, cucumber, red onion, mint leaves, and crumbled feta.
Drizzle with lemon vinaigrette dressing and toss to combine.
